THE PERFECT CHEESE FOR CHRISTMAS

The Stilton that we sell in the deli at Oakchurch is very special indeed and is just one of the British and local Herefordshire cheeses that we have at our deli counter.
 
Colston Bassett is a rich cream colour with blue veining spread throughout. 
The texture of the cheese is smooth and creamy with a mellow flavour and no sharp acidic taste from the blue.
 
  
 
This is one of last truly hand ladled Stiltons, hand made in the traditional way and this shows in its unrivalled flavour. 
Melt in the mouth perfection is what Colston Bassett delivers. 
 
Always popular at Christmas; Stilton is a versatile cheese – essential on a festive cheeseboard but also a tasty addition to a salad, in a soup or enjoyed with sweet dishes -a perfect partner to chocolate and ginger. 
 
For Christmas in addition to our cut stilton we also have baby Stiltons available -  these are just a smaller version of the originals and a great centre piece for any Christmas table. 
 
It goes without saying that Port is a perfect partner for stilton, but don't overlook the rest of your drinks cabinet - sloe gin, sauternes, a new world red or even a fruity stout all work well. 
 
We recommend keeping Stilton in the refrigerator wrapped in wax paper. However, to enjoy the cheese at its best – remove it from the refrigerator a couple of hours before eating, loosen the wrapping and let the cheese warm to room temperature. This improves both texture and flavour. If you do have any left (although we don't know why) Stilton can be frozen if you find you have too much. It should slowly be thawed in the refrigerator overnight before eating.
